21-Day Fix Meal Plan: July 27, 2015

So it's been a couple of weeks since I've posted one of these!  I was actually away for 5 days to Nashville for Summit, which is our annual Beachbody coach conference.  SO amazing.  A post on that is coming...

Since I've finished P90X3 a couple of weeks ago, I've done a week of PiYo and about a week and a 1/2 of the 21-Day Fix Extreme.  Well, I've decided to go back to P90X3 because my husband wants start (and because I love it so much!)...we started Monday!

Here is the meal plan I am following this week.  Each color represents a different color coded portion control container (want more info?  Keep scrolling...the original and Extreme are on mega sale this month).

I am following the 1800-2099 calorie bracket.  I am on the maintenance plan and am not eating at a deficit.  You will need to figure out the bracket that is right for you.  And if you are not already actively working with a Beachbody coach, use the form at the bottom to contact me and I can help you get started!  

Here are a couple of the recipes from this week: 

Honey Mustard Dressing
1/2 cup reduced fat Greek yogurt
3 TBSP Dijon Mustard
3 TBSP honey
3 TBSP rice vinegar
1/4 cup olive oil
sea salt to taste

Combine all of the ingredients except for the olive oil, whisk well to combine.  Slowly add oil until well blended.

Popcorn with Dark Chocolate Drizzle

We love our popcorn popper!  And since we've discovered how awesome coconut oil is as a topping for our air-popped popcorn, this snack has definitely become a staple in our house.


So the other night I thought I would try something new - chocolate drizzled on top.  Sweet and salty - amazing!  


I didn't even tell my kids I was doing it.  Our popcorn maker makes 8 cups of popcorn at a time so I gave them half with just the coconut oil and salt and kept the other 4 cups aside.  And the only reason?  Because you have to wait for the chocolate to firm up in the fridge and they are NOT that patient...this way was much better, trust me.  When I placed it down in front of them, they were like, "is that CHOCOLATE - on POPCORN??"    


It was gone in seconds.  I'm not sure if my husband even got to try any - they were totally boxing him out!  A really good treat that isn't entirely bad for you.  Of course now every time I make popcorn...  

 Serves 4 

Popcorn with Dark Chocolate Drizzle

4 cups air-popped popcorn
4 teaspoons coconut oil
sea salt to taste
2 TBSP dark chocolate,chopped

Toss the just popped popcorn with the coconut oil and sea salt.  Pour out onto a baking sheet lined with parchment paper.  Heat the dark chocolate in the microwave for about 30 seconds, stirring to make sure it's completely melted.  Take a fork or spoon and drizzle the melted chocolate all over the popcorn.  Place in the fridge for 5-10 minutes or until the chocolate has set.

No-Bake Energy Bars

I can't remember the last time I bought granola bars for my family!  We seem to always have some homemade version in the house.  I love this recipe because it sneaks in flax seeds and chia seeds, which are both great sources of fiber, antioxidants and Omega-3's (healthy fats!).  


Add in peanut butter, chocolate chips and raisins and your kiddos won't know they are good for them! No processed sugars, just honey for added sweetness.  These are amazing! 


























Just a bit crunchy from the seeds and chocolate chips, but gooey and dense and not dried out at all!  I kept mine stored in the fridge because they do get really soft when left at room temperature.  And I can't forget to mention that these literally take about 5 minutes to whip up!  So easy you'll never go back to store-bought again. 

Makes 9 large bars or 16 bites

No-Bake Energy Bars

1 1/2 cup old fashioned oats
1 cup natural peanut butter
1/4 cup honey
1/4 cup skim or almond milk
1/3 cup raisins
1/4 cup dark chocolate chips
1/4 cup flax seeds
1/4 cup chia seeds

In a large bowl, combine the oats, peanut butter, honey and milk; stir until mixed.  Add the raisins, chocolate chips, flax seeds and chia seeds and stir until everything is incorporated.  Press mixture into an 8 x 8-inch pan, cover and refrigerate a couple of hours, or until it hardens some.  Slice into bars or bite size pieces and keep stored in the fridge.

21-Day Fix Extreme Meal Plan: July 6, 2015

Just wrapped up P90X3!!  What an amazing program!  It took me 15 weeks instead of 12, but that's the beauty of home workouts - it's on MY time.  So what next?  Tomorrow I start the 21-Day Fix Extreme!!  I have never done any of the 21-Day workouts (even though I've been following the meal plan since February) and I'm excited!

Balsamic Vinaigrette

6 tablespoons balsamic vinegar
1/4 cup fresh lemon juice
1 teaspoon honey
2 teaspoons Dijon mustard
6 tablespoons extra-virgin olive oil

Combine vinegar, lemon juice and honey in a medium bowl; whisk to blend.  Stir in mustard; mix well.  Slowly add the oil while whisking; mix well.




Turkey Paninis from the Skinnytaste cookbook (but I use tomato instead of roasted red pepper)
