Week 2 of Hammer and Chisel started this week!! This program is unlike anything I have ever done and I know it's going to change me. It's tough and so challenging but that is exactly that I am looking for!<br />

Did you know that the Hammer and Chisel meal plan follows the same color coded portion control containers as the 21-Day Fix? So I did not even have to drastically change up my meal plan from my previous weeks...ok, except to cut the wine. Eek. I can do it!!<br />

Yesterday was our last day of winter break and after traveling for 10 days and just being go-go-go the entire 2 weeks the kids were out, we decided to lay low. So we stayed in (it was super cold outside anyway!) and baked! I have been wanting to use up the dried cranberries I had in my pantry and that's how these Cranberry Oatmeal Muffins came to be...</div>

The kids of course wanted to help but were less than thrilled about these at first. I think they were all expecting something with chocolate (there's no denying they are my children!) but actually my 6-year old kept saying, "these smell SO good!" as we were making them.</div>

And yes, they are SO good! I made them split one in case they didn't end up liking them, but I saw my 4-year old grab another off the wire rack a little later on...he thought he was being sneaky. Only sweetened with pure maple syrup and unsweetened applesauce, so truthfully I'm thrilled that they loved them! A perfectly wholesome snack for them. </div>

<i><u>Cranberry Oatmeal Muffins</u></i><br />

1 egg<br />
1/4 cup pure maple syrup<br />
3 tablespoons melted coconut oil<br />
1 cup unsweetened applesauce<br />
1/2 cup skim or almond milk<br />
1 1/4 cup oats<br />
3/4 cup white whole wheat flour<br />
1 1/2 teaspoons cinnamon<br />
1 teaspoon baking powder<br />
1/2 teaspoon baking soda<br />
1/4 teaspoon salt<br />
1/3 cup dried cranberries<br />
1/4 cup chopped pecans<br />
<br />
Preheat oven to 375 degrees. Coat a 12-cup muffin pan with non-stick cooking spray and set aside. In the bowl of a stand mixer, combine the egg, maple syrup, coconut oil, applesauce and oats; mix on low to combine. In a small bowl combine the flour, cinnamon, baking powder, baking soda and salt. Add to the oat mixture and mix until combined. Add the cranberries and pecans and mix again.<br />
<br />
Divide the mixture evenly into the muffin tins, filling about 3/4 of the way full. Bake for 15-20 or until a toothpick inserted in the center comes out clean. <br />

Body Beast is unlike anything I've done so far and if this doesn't prepare me for Hammer and Chisel I don't know what will! My team and I have already decided we will be running an EXCLUSIVE TEST group for Hammer and Chisel starting January 4th (more info at the bottom of this post!) <i><u>{21-Day Fix Approved} Vanilla Cake with Chocolate Frosting</u></i><br />
<br />
1 1/2 cups white whole wheat flour<br />
2 teaspoons baking powder<br />
1/4 teaspoon sea salt<br />
3/4 cup unsalted organic butter, room temperature, divided<br />
1 cup of honey (or maple syrup)<br />
4 large eggs<br />
1/4 cup + 3 tablespoons unsweetened almond milk<br />
1 teaspoon pure vanilla extract<br />
2/3 cup unsweetened cocoa powder<br />
<br />
Preheat oven to 350 degrees. Coat a 9-inch round cake pan with non-stick cooking spray and set aside. Combine the flour, baking powder and salt in a medium bowl and mix well. Set aside.<br />
<br />
In a medium bowl, using an electric mixer, cream together 1/2 cup butter and 3/4 cup honey for 1 minute. Add eggs 1 at a time, beat until blended. Add flour mixture to butter mixture and beat until creamy.<br />
<br />
Pour batter into prepared pan. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Cool on a baking rack.<br />
<br />
Beat the remaining 1/4 cup butter in a medium bowl for 1 to 2 minutes or until creamy. Add remaining 3 tablespoons of almond milk to butter and beat until blended. Add cocoa powder, beat until blended, scraping down the sides of the bowl. <br />
<br />
Slowly add the remaining 1/4 cup honey while beating on medium speed. Once cake is cooled, evenly spread with frosting and cut into 12 slices. <br />

My in-laws were visiting as they do every Thanksgiving and while I knew that I was going to indulge here and there and then on Thanksgiving day, what I didn't expect was that I was going to completely derail from my fitness goals. <br>

Because here's the thing...one night with a few drinks and pizza turned into a few more nights of drinks and take-out, etc., etc. Sweets once again became addicting, everything started to add up, and all the alcohol definitely slowed my metabolism. <br>

The crazy thing is...I didn't miss one workout ALL week. But they weren't effective. As the saying goes, "you can't out exercise a bad diet." So true!! Plus, when I did "try" to exercise, I wasn't giving it my all because I was just sluggish. <br>

I'm totally owning ALL of it. And I knew that I was going to go all in with the 21-Day Fix meal plan starting that Monday, but man, I just needed to break this cycle fast. So, I decided to do the one thing I've been too nervous to try first - the 3-Day Refresh. Because that is exactly what it's for - to lose weight fast, but safe, and to break some bad habits (which were clearly starting to form again...ugh).<br>

And here are my results! Down 3 full inches on my waist. I did not weigh myself - although I know I lost weight. It wasn't the reason behind doing this so I didn't need to know! <br>

Day 1 was rough...I was tired and hangry (ha!) by the end of the day. Day 2 was great! I slept like a rock both nights actually, but I definitely had the most energy on Day 2. I actually poured myself a cup of black coffee with stevia - which is refrained upon (allowed, but they suggest you drink green tea) - and didn't even DRINK it!! All my energy was completely natural. I felt full and did great. Day 3 was good, I definitely started to feel a little tired again by the end of the day. I crashed hard that night and woke up feeling amazing the next morning!<br>
<br>
I wanted to get rid of that horrible bloat and I'm thrilled with my results! The important thing is that I've cleansed/reset my body to where it needs to be and I got rid of the toxins and "ick". <br>

It was tough, but I didn't feel hungry ALL the time. The hardest parts for me were the morning and the few hours after dinner. In the morning, you are only allowed Shakeology, green tea and the Fiber Sweep drink. I could not WAIT until lunch when I could eat FOOD! The few hours after dinner were hard and that was when I started to get irritable and feel like I could eat everything in the kitchen! The best thing to do is to chug water and go to bed! <br>
<br>
And water...SO so important on the Refresh. Not only does it help keep the hunger away but it really gets that fiber working properly. <br>

Hammer and Chisel is an expert workout system that delivers breathtaking, body-changing results in 60 days! Trainers Sagi Kalev and Autumn Calabrese are amazing experts at sculpting bodies and have tons of awards to prove it! A few weeks ago we were at our local farmers' market when I saw what I thought were gourds and picked them up because I thought they would make a great fall decoration. As I was paying, I was informed that what I picked up was an acorn squash and that I needed to EAT it! So...after a bit of research, I decided to try roasting it. Even my husband, who was totally unsure, could not stop raving about this roasted acorn squash! </div>

They really could not be easier to prepare! Cut in half (ok, yes that is the hard part!! Good knife and a steady hand!), remove the seeds and it's 4 ingredients - butter, coconut sugar, cinnamon and sea salt. Be prepared because it does take a little over an hour for these to roast. I honestly had no idea they would take that long and they weren't exactly ready when the rest of our dinner was...<br />

Acorn squash is a winter squash and when choosing one, it should feel firm on the outside with no blemishes. Don't they look pretty even after being roasted? This dish would be a beautiful side for the Holidays. And they are a great source of vitamins - A (beta carotene from the orange flesh) and C, also iron and riboflavin. Enjoy!!</div>

<i><u>Roasted Acorn Squash</u></i><br />

2 small acorn squash, cut in half and seeds removed<br />
4 teaspoons organic butter<br />
4 teaspoons coconut sugar<br />
1 teaspoon cinnamon<br />
sea salt<br />

Preheat oven to 450 degrees. Assemble acorn squash on a baking sheet. Place 1 teaspoon of butter and coconut sugar in each half. Add 1/4 teaspoon of cinnamon in each and season with salt. Bake until golden and tender, about 1 hour to 1 hour 15 minutes, basting flesh of squash several times. Serve warm.<br />

<i><u>Coconut Chocolate Chip Granola</u></i><br />

1/4 cup coconut oil<br />
1/4 cup honey<br />
2 tablespoons maple syrup<br />
2 cups old fashioned oats<br />
1/2 cup shredded coconut<br />
1/2 cup chopped nuts<br />
1/4 cup flax seed<br />
1/4 cup raisins<br />
1/4 cup dark chocolate chips<br />

Preheat oven to 300 degrees. In a microwave safe bowl, combine the coconut oil, honey and maple syrup and microwave for 15-30 seconds to slightly melt everything. In a large bowl, combine the oats, coconut, chopped nuts, flax seed and raisins. Pour the coconut oil mixture over top and stir until everything is coated. <br />

Pour the mixture onto a baking sheet lined with parchment and bake for 30 minutes or until golden brown (it will be soft when it first comes out of the oven and harden as it cools). Add the chocolate chips when the granola has cooled. Store in an airtight container at room temperature for up to a week or freeze for up to 2 months.<br />

I have a recipe on my blog for <a href="http://theartofcomfortbaking.blogspot.com/2012/10/cinnamon-rolls-with-cream-cheese-icing.html" target="_blank">Cinnamon Rolls</a> already and I firmly believe you can "clean" up almost any recipe if you know what substitutions work for different ingredients. So my final recipe was a "take-two"...the first time I tried it, the dough was a bit dried out and overall, they weren't as sweet as I had hoped. My children did not mind. They devoured them. On the second attempt, the dough was MUCH better. Soft and sweeter and yummy! Even the next day, after sitting in the fridge, they completely softened up when popped in the microwave. </div>

Keep in mind that this recipe takes a long time...hours in fact!! Lots of time to let the dough rise. It's a fun project if you have kids. They loved seeing the dough get bigger and the rolls plump up. My 5 and 3-year old were also great rollers and helped spread the filling. A fun weekend activity for all! </div>

I added just a little of cinnamon to the icing. This is optional, but I liked seeing the warm little specks of the spice in the icing. It actually makes a lot, so even after I iced them twice, we still had some left over to drizzle over top (if necessary). These may be "clean" but they are definitely a treat! <br />

Switch to the dough hook and add the additional flour 1/4 cup of a time until the dough pulls away from the sides (will still be a little sticky). Continue kneading for about 5 more minutes. </div>

Spray a large bowl with non-stick cooking spray and place the dough ball in, turning a few times to coat with the oil. Cover with a clean kitchen towel and place in a warm spot for 1 hour to let the dough rise. Punch down the dough, then let it rise again for another hour. </div>

Punch down the dough and transfer to a lightly floured work surface. Roll the dough out to approximately 14 x 22 inches. Spread coconut oil onto dough leaving a 1-inch border on one of the long sides. </div>

Make the filling: combine the coconut sugar, honey, maple syrup and cinnamon in a bowl and spread evenly over the coconut oil on the rolled out dough, making sure to leave that 1-inch border untouched.</div>

Roll the dough into a log, ending with the untouched dough on the bottom to seal the whole thing together. Cut off the uneven ends, score your dough every 2 inches and then cut through using those marks. Place parchment paper in the pans you are using (I used those throw away foil pans) and then spray with non-stick cooking spray. Cover with a dish towel and let them rise again for another hour. </div>

Bake at 350 degrees for 18-20 minutes until the tops are golden brown.</div>

While they are baking, make the icing. In a medium bowl, using an electric mixer, combine the cream cheese, honey, maple syrup, vanilla and cinnamon until smooth. Scrape down the sides and mix again briefly. </div>

Once you pull the cinnamon rolls out the oven, frost with half of the amount of icing made (it will melt down into the rolls). Then once they have cooled, frost again with the remaining icing.<br />

My family seems to go in waves of what fruit they like best...we go strong on one type for a few weeks, then we move on. For awhile, we were all obsessed with blueberries! So we put them in everything - oatmeal, muffins, pancakes, you name it. <br />

Pancakes are our Sunday morning tradition. This healthier, clean version may not be as easy as just pouring it out of a bag and mixing with water, but they are totally worth it. 2 cups white whole wheat flour</div>

2 teaspoons baking powder</div>
<div>
1 1/2 teaspoons baking soda</div>

1/2 teaspoon salt</div>
<div>
1 tablespoon honey</div>
<div>
2 large eggs, beaten</div>
<div>
1 3/4 cup milk</div>
<div>
1 cup fresh blueberries</div>
<div>
organic butter or coconut oil for frying </div>

In a large mixing bowl, whisk together the flour, baking powder, baking soda and salt. Add the honey, eggs, milk and whisk until everything is combined. Carefully fold in the blueberries. Heat a <a href="http://www.amazon.com/gp/product/B00CI51RS4/ref=as_li_tl?ie=UTF8&camp=1789&creative=9325&creativeASIN=B00CI51RS4&linkCode=as2&tag=cleanandcom08-20&linkId=EBSMUCJMQYRWVEND">griddle</a> or pan over medium heat. Add butter or coconut oil to melt and coat the bottom. Spoon batter onto griddle or pan, using about 1/4 cup. When bubbles start to form on the top, flip the pancakes and cook on the other side. Remove from pan, repeat with butter and batter. Serve with maple syrup. </div>

This recipe was only the second time that I've prepared salmon in my life. I wasn't sure the best way to cook it and was overwhelmed when I asked what the best way to prepare it was on <a href="https://www.facebook.com/brooke.disylvestergriffin" target="_blank">Facebook</a>! So currently, baked in foil is the ONLY way I know how to make salmon but I LOVE it. Couldn't be easier...and this roasted salmon with lemon and dill is so flavorful and amazing! <br />

The sauce is quick and delicious and the lemons just pair so well with it all! My 18-month old scarfed it down, my husband loved it and of course my 3 and 5-year olds wouldn't touch it. No surprise there. </div>

<i><u>Roasted Salmon with Lemon and Dill</u></i><br />

1 1/4 pound good quality salmon<br />
3 tablespoons olive oil<br />
1 clove garlic, minced<br />
1 teaspoon dried dill<br />
1 lemon, sliced<br />
Sea salt and fresh ground pepper<br />

Preheat oven to 375 degrees. Combine the olive oil, garlic and dill in a small bowl. Set aside. Place the salmon filet in a piece of foil large enough to fold over and seal. Season with salt and pepper to taste. Pour the olive oil mixture evenly over the salmon, then top with lemon slices. <br />
<br />
Bake for 12-14 minutes or until firm. Turn on the broiler, open the foil and allow the salmon to broil for 2-3 minutes. Keep an eye on it! Remove, cut into servings and serve immediately. <br />

Usually when I get my monthly magazines in the mail, they immediately get tossed one of my (MANY) magazine baskets I have around the house until I have the chance to read them. For some reason, I was compelled to open this month's Clean Eating magazine right away and there was one salad in there that I immediately had to make. The squash is roasted in tumeric, and this was my first time using it. It turns everything yellow FYI! But it's so good and I would roast the squash this way as a side dish in the future. Tumeric is actually being studied for it ability to prevent or slow the spread of cancer, which is pretty amazing. Definitely a spice I plan on using a lot more...<br />

<i><u>Roasted Butternut Squash and Brussel Sprout Quinoa Salad</u></i><br />

1 cup uncooked quinoa<br />
1 1/4 pound butternut squash, peeled, seeded and cubed<br />
2 tablespoons olive oil, divided<br />
1/2 teaspoon ground tumeric<br />
10-12 Brussel sprouts, trimmed and sliced thin<br />
2 cloves garlic, minced<br />
1 small head radicchio, roughly chopped<br />
sea salt<br />
fresh ground pepper<br />

<i>For the vinaigrette</i><br />
1/4 cup olive oil<br />
2 tablespoons balsamic vinegar<br />
2 tablespoons fresh orange juice<br />
1 teaspoon pure maple syrup</div>

Preheat oven to 325 degrees. While that heats, cook the quinoa according to the package directions, then set aside. Add the butternut squash to a large sheet pan and toss with 1 tablespoon oil, 1/2 teaspoon pepper and 1/4 teaspoon salt. Roast until squash is tender, stirring a couple of times during cooking, about 40 to 50 minutes.<br />
<br />
In a large skillet on medium, heat 1 tablespoon olive oil. Add the Brussel sprouts and 1/4 teaspoon each salt and pepper and cook, stirring occasionally, until they are crisp-tender, 6 to 8 minutes. Add the garlic during the last minute of cooking, stir until the garlic is fragrant. Remove from heat. <br />

To make the dressing: in a medium bowl, whisk the oil, vinegar, orange juice, maple syrup and 1/4 teaspoon each salt and pepper until combined. In a large bowl, combine the quinoa, squash, Brussel sprouts, radicchio and vinaigrette. Toss well to combine. Store leftovers in the fridge. <br />

I replaced the white sugar with coconut sugar and honey, used white whole wheat flour to replace the all-purpose flour and I seriously cannot tell a difference between these and the old version. They are just as dense and brownie-like and SO good! </div>

I just made these two days ago and the entire pan is almost gone. They are TOO good! Dangerous to keep around (even if they are healthier!). I kept mine in the fridge and I swear every time I opened it up, I would sneak a piece off of one of the bars. It adds up, believe me! But my kids love them and it feels good to give them a yummy snack that is not full of processed sugar. <br />

<i><u>Healthier Pumpkin Chocolate Chip Bars</u></i><br />
<br />
1 cup organic unsalted butter, room temperature<br />
3/4 cup coconut sugar<br />
3/4 cup honey<br />
1 egg<br />
2 teaspoons vanilla extract<br />
1 cup canned pumpkin puree<br />
2 cups white whole wheat flour<br />
1 tablespoon pumpkin pie spice<br />
1 teaspoon baking soda<br />
3/4 teaspoon sea salt<br />
1 package (12 oz) dark chocolate chips<br />

Preheat oven to 350 degrees and spray a 9 x 13-inch baking pan with non-stick cooking spray. In the bowl of a stand mixer, cream butter, coconut sugar and honey until smooth. Add egg and vanilla and beat until combined. Mix in pumpkin puree.<br />
<br />
Combine the flour, pumpkin pie spice, baking soda and salt in a small bowl. On low speed, mix dry ingredients into wet until just combined. Fold in chocolate chips.<br />
<br />
Spread batter evenly in pan and bake until a toothpick inserted in the center comes out almost clean, about 30-35 minutes. Cool completely in pan. Cut into 24 squares.<br />

This picture is the main reason I started making my own taco seasoning. The picture on the right was a jar of seasoning I had in my pantry. I mean the first ingredient is chili pepper and the second is 'other spices'? What does that even mean? Paprika extract (and just for color)...why not just use paprika? <br />

1/4 cup chili powder<br />
1/4 cumin<br />
2 tablespoons (optional or use to taste)<br />
1 tablespoon garlic powder<br />
1 tablespoon onion powder<br />
1 teaspoon paprika<br />
1 teaspoon fresh ground black pepper<br />
1/2 teaspoon dried oregano<br />
<br />
Combine all of the ingredients and store in an airtight container. To use - 3 tablespoons equals a packet of seasoning. <br />
